Ingredients
Mutton 1-1/2 kg
Garlic 1 whole bulb
Salt to taste
Whole black pepper 7-8
Crushed black pepper 1-2tsp
Clarified butter (ghee) 5tbsp
Coriander seeds (roasted and crushed) 1tbsp
Cumin seeds (roasted and crushed) 1 tbsp
Tomatoes 1/2 kg
Allspice powder to taste
GG paste 2 tsp
Green chillies for garnish
Coriander leaves for garnish
Method
Boil Mutton with garlic cloves and whole black pepper. Save the broth
Take a wok, heat ghee and add boiled mutton.
Add tomatoes, crushed black pepper, salt and green chillies, g/g paste and mutton broth.
Cook till the water dries. When oil comes at the top add coriander, all spice powder, and crushed and roasted cumin and coriander seeds.
Give koyla dum at the end.
