Ingredients
1 small Head Cauliflower (Phool Gobi) - cut in big chunks
2 carrots (Gajar) - chopped
2 Capsicum (Shimla Mirch) Small - big chunks
2-3 small potatoes (Aloo) - cubed
1/2 cup Peas (Matar)
2 Tomatoes - Sliced
2 tbsp Tomato Puree
Ginger (udrak) -shredded
2 Hari Pyaz ke patty- chopped
4 Hari pyaz white part - cut into 4 pcs each
Hara Dhania and green chillies for garnishing.
Udrak lehsun Chopped - 1tbsp
1 tsp Kuta Hua Zeera
1 tsp Haldi
1-1/2 tsp Lal Mirch
Salt to taste
2- 3 Tablespoon Ghee/ oil
Method
1. Put the veggies in boiling water for 2-3 minute then drain it, wash with cold water and Keep them aside. (Carrots, potatoes, matar, cauliflower) except for capsicum and hari pyaz.
2. Heat 2-3 tbsp Ghee in a wok, add white part of Hari pyaz and shimla mirch. Saute for a while until they are soft.
3. Add udrak lehsun, haldi, lal mirch and tomato puree. mix it well.
4. Now add Boiled Veggies, Salt, 1tsp kuta hua zeera, 1 Tbsp Shredded ginger, and sliced tomatoes. Thora sa warm water add karen.
5. Cover and cook on medium to low heat.
6. Finally add hari pyaz ke pattay chopped , hara dhuniya and some green chillies. cover for 2-3 minutes until all the veggies are cooked.
