Pineapple Nutty Cake

Ingredients
One tin of pineapple.....save the juice and keep the slices in the sieve.
Chopped nuts...1 cup.
In a large bowl...add
Caster sugar...1 cup
Oil...3/4 cup
Vanilla essence...1tsp
Eggs...3
Beat on high speed with an electric beater for at least 6 min...so that the yolk will change its colour into pale yellow. Off the beater.

Method
Sieve 2 cups all-purpose flour with 1.5 tsp baking powder.
In another bowl ...add 1.5 Tbs cocoa powder...add 4 tbs milk ....make a paste & keep it aside.
Mix flour in egg mixture by using hand whisker along with half cup of pineapple juice.
Now pour half of the white cake batter into the Paste of coco ...mix well.
Now we have two mixtures...half white...half chocolate.
Grease a round baking tin.
pour white mixture evenly.....Place pineapple slices over it...Sprinkle a hand full of chopped nuts.
On the nuts ...gently pour chocolate mixture as a 2nd layer.....spread it carefully over the nuts, so that it will not mix up with the lower layer.
once again decorate the top with pineapple slices+ nuts of your choice.
Bake it in preheated oven for 50-55min on 125 degrees.

Tip
Always coat and roll nuts in 2 tbs flour...so that they will not sink inside the cake batter.
Keep pineapple slices in a sieve for half an hour ...to remove all juice...otherwise, they will remain moist.
