Ingredients for Red Velvet Cake Bites
All-Purpose Flour - 2½ cups (312g)
Granulated Sugar - 1½ cups (300g)
Baking Soda - 1 teaspoon (5g)
Salt - 1/4 tsp ( 2g )
Cocoa Powder- 2 Tbsp (12g)
Vegetable Oil - ¾ cup (175ml)
Buttermilk - 1 cup (237ml) ( I used Laban )
Eggs Large - 2 (100g)
Red Food Color - 1 Tbsp or more your option for how red you want it
White Vinegar - 1 teaspoon
Vanilla Extract 1 teaspoon
Red Velvet Cake Bites preparation method
1. Into a large bowl sift together the Flour, Baking Soda, Salt, and Cocoa Powder
2. In another bowl, add the red food color and the vinegar to the sugar, vegetable oil, eggs, vanilla, and buttermilk.
3. Add all of the liquid ingredients to the dry ingredients and whisk together by hand until all is combined and smooth about 15 strokes.
4. Divide the batter amongst your prepared pans and bake immediately in a preheated 180 C oven for approximately 30 minutes or Until It Is Done
5. Cool down and cut into squares, pipe the frosting, sprinkle the cake crumbs and serve
Cream cheese frosting Ingredients
Cream Cheese - 1 Cup (220g )
Unsalted Butter - 1/4 cup ( 50 g )
Confectioners Sugar - 3/4 cup (80 g)
Clear Vanilla Extract - 1 teaspoon
Method
1. Place butter in the bowl of the Kitchen Aid mixer with the paddle attachment and cream smooth, transfer to a separate bowl and reserve.
2. Do the same thing with the cream cheese and mix smooth, but do not whip on high speed.
3. Add the reserved butter to the cream cheese and mix the two together until smooth.
4. Add the sifted confectioner's sugar all at once and mix just until blended and add the vanilla extract
5. Refrigerate the icing as cream cheese is highly perishable.
