Pav Bhaji Ingredients
4 Potatoes boiled & mashed
Green peas (1/4 cup)
Cauliflower chopped ( half cup)
Carrots chopped ( half cup)
Capsicum one big chopped
3 Onions chopped
Oil 2tbsp
Butter
Salt to taste
Ginger Garlic paste 1.5 tbsp
3 tomatoes chopped /puree
Coriander chopped
Pav Bhaji Masala
(Dry roast 2tbsp coriander, 1tbsp Cumin seeds, 1tbsp fennel seeds, 2 sticks cinnamon, 1 black cardamom, 3 green cardamom, 1 bay leaf, few curry leaf, 4cloves, 7-8 peppercorns, 2 Kashmiri red chilies cool them and add 1tbsp of red chili powder, 1/2tbsp turmeric powder and 1/2tsp khatai powder make a fine powder)
Pav Bhaji preparation method
In a deep pan put oil & 3tbsp butter, saute onions for 10mins on medium flame, now add ginger garlic paste saute & add tomatoes and cook for 5 mins.
Now add bhaji masala stir , add capsicum, Green peas, cauliflower & carrots, salt add ĺittle water and cook for 10mins, now add mashed potatoes, mix everything well and keep mashing with a masher lid and cook on low flame till oil comes up ( it should be little liquid) add lots of coriander. ( i used a pinch of food color for red color)
Serve with butter on top and chopped onions and lemon Enjoy the Famous Bombay's Streat Food
