Chicken With Oregano | Roasted Chicken | Lemon Chicken Chinese | Chicken Piccata
Ingredients
1 1/2 kg whole chicken
2 tsp salt
1 tbsp lemon juice
1 tsp oregano
1 tbsp hot sauce
2 tbsp ginger garlic paste
2 tbsp Worcestershire sauce
1 tsp red chili flakes
1 tsp crushed black pepper
2 tbsp ketchup
1 tsp mustard paste
3 tbsp butter melted
1 tbsp Tabasco sauce

Combine all the ingredients except the chicken in a bowl. Mark deep cuts on chicken. Rub the chicken all over with the spice mixture and leave for 2 hours. Cover with foil and bake
Preheated oven at 280 degrees for about 1hour. Serve with salad,, lemon and herb roasted potatoes and grilled onions and tomatoes. Enjoy!


Lemon and Herb Roasted Potatoes Ingredients
6 large sized potatoes peeled and cut into cubes
2 tbsp lemon juice
1/3 cup olive oil
1/2 tsp black pepper
1/2 tsp salt
1 tsp oregano
1/4 tsp thyme
1/4 tsp rosemary


Method
Boil the potatoes in salted water for about 3-4 minutes, drain the potatoes and let them stand for 5 minutes. Then toss the potatoes in lemon juice. Add the salt, pepper, rosemary, thyme, and oregano. Pour olive oil bake 10 minutes, turning them and bake until golden.


Grilled Onion and Tomatoes Ingredients
6 onions (cut into round rings)
3 tomatoes (cut like the onions)
3 tbsp oil
3/4 tsp salt
1/2 tsp black pepper powder
1 tbsp Worcestershire shire sauce
1 tbsp ketchup
1 tsp hot sauce


Method
Heat oil in a grill pan and fry onion rings for 2 minutes add all the above ingredients and fry 1 to 2 minutes.
