Spicy Mutton Raan Roast Ingredients
Mutton Leg 3.5 kgs
Laziza Tikka Masala 1 packet
Vinegar 1/2 cup
Soya sauce 3/4 cup
Ginger garlic paste 2 tbsp
Crushed red chili 1 tbsp
Crushed zeera 1 tbsp
Crushed coriander 1tbsp
Salt as per taste
Lemon juice 3-4 tbsp
Yogurt 1 cup
Oil 4-5 tbsp
Directions:
wash and pat dry the mutton leg.
Mark deep cuts all over the raan.
Marinate raan with vinegar and soya sauce and keep refrigerated for 2 hours.
Now remove/drain out the excess soya sauce/vinegar.
Mix all the above remaining ingredients in yogurt, marinate the raan and put in refrigerator overnight.
Now in oven tray put aluminum foil and grease it with oil and put raan in it.
Turn on oven and place the tray in middle with both sides heating on at 180 degrees temperature.
After 40minutes change the side and let the raan cook for another 40mins till all the water dries and it is done.
You can give coal smoke for the bbq flavor
Wrap the raan in aluminum foil right after taking out from the oven, this trick keeps the raan juicy and it won’t get dry.
Serve with puri paratha and imli ke chutney.
Imli ke chutney: ( chutney served with bbq)
Imli pulp - 1/2 cup
Garlic cloves - 3
Green chili - 1
Mint - few leaves
Fresh coriander - few leaves
Cumin - 1/4 tbsp
Onion - few slices
Salt - to taste
Blend all the ingredients with the hand blender and it is ready to serve.
