Dhaaba mix Bhaaji

Ingredients
* Palak ( spinach ) 1/2 kg Remove stems n cut thin. Wash thoroughly
* fresh green coriander 2 whole bunches with stem ( chopped ) and washed
* fresh methi ( fenugreek) 2 bunches ( small ) Remove stems and washed.
* Soya 1 bunch ( remove stems n washed )
* brinjal ( round ) 250 grams Cut into squares of 1 1/2 inches
* lauki 250 grams Peeled n cut into 1 1/2 inches squares
* potatoes 2 medium Peled and Cut into squares
* green peas 1/2 cup
* onions 2 medium sized Cut into thin slices
* tomatoes 4 medium sized cut into slices.
* salt 1 1/2 Tsp
* turmeric powder 1 1/2 Tsp
* green chillies 6 ( small ) Grinded
* Ginger garlic paste 2 tbsp Freshly grinded
* red chilli flakes 1/2 tsp
* oil 1 cup
Method
Cut all vegetables n wash thoroughly in running water.
Remember, so many dust particles stick on vegetables so wash nicely.
Make the fresh paste of ginger garlic n green chilli paste ( fresh paste is required for authentic taste )
Heat oil n sautéed onion till light pink in colour, now add all vegetables along with turmeric, ginger garlic n green chilli paste
Mix well n cover for 5 minutes
After 5 minutes all the veggies turn mushy
Now add salt and red chilli flakes
Cover n cook on medium high heat till oil separates
