Marination Ingredients for Chicken Satay
For the marination, put around 6-8 stalks (and leaves) of coriander in a food processor with 2 green chillies, 2 cloves of garlic, 3 heaped tbsp crunchy peanut butter, a tsp of soya sauce, 1 inch piece of ginger, juice of 1 lemon, tsp of sambal, splash of water and whiz till it all comes together to a paste. Season with salt and pepper. I kept 1/4th of it as a dip to be used later and the other 3/4th I spooned on top of 600 gms chicken cubed. Mix and set it aside for a few hours.

(Sambal was not in the original recipe. So you can skip that if you dont have it. Its an indonesian hot sauce for people who dont know about it)

Skewer the pieces, drizzle olive oil and put it in the oven, top-ish shelf, under the broiler. Flipped the chicken sticks after 10 minutes. Let it cook for another 10 minutes or till cooked.
