Mutton Mandi 



Ingredients for Mutton Mandi 
Mutton Leg 1 (almost 2 kg)
Salt to taste
Mandi masala 2.5 Tbsp
Ginger garlic paste 2 Tbsp
Lemon juice 4 Tbsp
Lemon zest 1/2 tsp
Oil 5 Tbsp
Onions 2 med (finely chopped)
Green chillies 2
Cloves 5-6
Cinnamon 2 sticks
Green cardamom 5-6
Black peppercorns 1 tsp
Rice 4 cups (soaked for 20 mins)
Water as required
Nuts of ur choice
Coriander for garnishing
Coal 1 pc

Mandi masala:
Coriander seeds 2 Tbsp
Zeera 1.5 Tbsp
Black peppercorns 1 tsp
Cinnamon sticks 1 tsp
Cloves 1/2 tsp
Green cardamom 1 tsp
Turmeric powder 1/2 tsp


Method:
First dry roast everything except turmeric powder mentioned under Mandi masala. Then cool it down n make a fine powder using a coffee grinder. Add turmeric powder n set aside. Ur Mandi masala or saudi spice is ready.

Now clean mutton leg n pat dry. Make deep gashes in the meat using a knife. Now in a bowl add mandi masala, ginger garlic paste, lemon juice, lemon zest salt n mix properly n marinate meat with this marinade. Make sure u rub marinade in gashes properly so that meat becomes tender, juicy n yummy. Keep it overnight in the fridge.


Now, let's start cooking, lightly brown onions n add all the whole spices mentioned above. When spices release their aroma in the oil add marinated leg n slit green chillies n turn it few times so that oil covers the meat. Now add water in the required quantity. Plz, keep in mind that we need water for mutton cooking n yakhni both. Now let the mutton cook on slow flame for almost 2.5 - 3 hrs. When meat becomes so tender that it almost leaves the bone that's the point u take ur mutton out of the pan. Add rice in the yakhni, adjust salt n add 1 tsp mandi masala n let it cook. While fry cooked mutton in frying pan so that it got that wow colour. When putting rice on dum place meat on top n red-hot coal too so that our mandi got that BBQ smell too. Put it on dum for 10-15 mins. N voila yummy, juicy not at all spicy Mandi is ready to serve with tomato chutney n yoghurt garlic sauce n salad of yur choice.

Tomato chutney
Blend 2 tomatoes, 1 green chilli, coriander leaves. Add salt, zeera powder n garlic powder 1/4 tsp.

Yogurt-Garlic Sauce
Mix yoghurt, garlic powder, salt n zeera powder.

Serving
Add rice first in the platter then nuts then Mandi n sprinkle nuts n green coriander on top. Serve n enjoy.
