Persian Spice Mix

Cumin, coriander, toasted and ground
Sumac
Saffron threads crushed
Coarse sea salt (not table salt makes it bitter)
White pepper
Orange peel dried ground
Red chilli flakes
Cinnamon
Allspice
Turmeric
Cardamom ground
Smoked paprika
Nutmeg
Black pepper
Curry powder

Toast whatever whole spices on the list you can get and grind. Store in an airtight container (I use mason jars), can’t keep my friend's hands of this so I make multiple jars to give away.

Great for kebab, chicken, fish, even sprinkled on fries. please use an approx 1/3-1/4 cup of each spice except salt and saffron. I use about 1-2 tbsp of each of those.

1/3-1/4 cup use less of flavours you don’t prefer and more of flavours u do.
