Ingredients for Mediterranean Grilled Chicken
2 boneless chicken breast cut into cubes
1 teaspoon red chili flakes
1 tablespoon Vinegar
2 tsp paprika
1 tsp dried thyme
1/4 teaspoon ground green cardamom
A pinch of black pepper
1/2 teaspoon garlic powder
1 yellow onion, sliced
1/2 cup extra virgin olive oil
Up to 10 garlic cloves, minced
3 large limes' juice
1 green bell pepper, one red bell pepper, one orange bell pepper cut into pieces
1 red onion, 1 dark cabbage cut into pieces.
Mediterranean Grilled Chicken preparation method
Combine all the ingredients in a bowl except the vegetables.
Add chicken in the bowl and coat with the spices generously.
Refrigerate it for 2-3 hours! Just right before grilling, thread the chicken cubes, vegetables (except for the cabbage) onto skewers. When ready, drizzle some olive oil over the chicken skewers and grill them on medium heat, turning occasionally, for 15 minutes, or until the chicken juices run dry. Drizzle some more lemon juice on the top when you take the chicken out of the skewers to serve.
Serve with Lemon Rice, Tahini on the side and fresh vegetable salad.
