Alfaham chicken, Madghout Rice, Mutabbal and Tomato Chatni

1️⃣Alfaham Chicken 🍗
1 kg chicken with skin
1 large / 2 medium tomatoes
1 small onion
Few leaves of coriander
2-3 green chillies
2 tbsp ginger garlic paste
2-3 tbsp lemon juice
2 tbsp yoghurt
1/4 tsp turmeric powder
1 tbsp chicken tandoori/ tikka masala (optional)
1 tbsp coriander seeds
1 tbsp fennel seeds
2 tsp cumin seeds
2 tsp whole black pepper (or powder)
1 stick cinnamon
1 black cardamom
4 green cardamom
4 cloves
1 bay leave
3 dried red chillies (alternate: whole red chillies)
1 dried lemon
2 tbsp oil
Pinch of orange food colour
Salt to taste ( i added 2 tsp)
✔️ Roast all dry spices (coriander seeds, fennel seeds, cumin seeds, whole black pepper, cinnamon, black and green cardamom, cloves, bay leave, dried red chilli), grind and keep aside.
✔️ Blend tomatoes, green chilli and onion. In this mixture add ginger garlic paste, turmeric, above-prepared masala, tandoori/ tikka masala, lemon juice, food colour and mix well.
✔️ Marinate chicken with this mixture and oil for minimum 2 hours or overnight for better result and then Grill. I grilled in the oven and then followed this method
2️⃣ Madghout Rice 🍚
4 cups Rice (Basmati soaked for 30-45 minutes)
Oil 1/2 cup
1 large Onion chopped
1 large / 2 med tomatoes chopped
1 tbsp tomato paste/ purée
3-4 green chillies
2 Dried lemon or 2 tsp lemon zest
2 chicken cubes or 1 tbsp chicken powder
4 garlic cloves chopped
1 stick Cinnamon
4 Green Cardamom
10-12 Black pepper
2 bay leaves
1 tsp coriander powder
1 tsp coriander powder
1 & 1/2 tsp allspice powder
1 & 1/2 tbsp Salt or to taste
✔️ fry onions along with cinnamon, cardamom, black pepper and bay leaves.
✔️ When onions turn to pink colour now add dried lemon/ lemon zest and chopped garlic.
✔️ Fry until you get a light golden colour of onion and garlic (don’t over fry).
✔️Now add tomatoes, tomato paste/ purée, green chillies, chicken cube/ powder and all dry spices (coriander powder, cumin powder, all spice powder, salt. Stir and simmer till the ingredients start to separate from oil (Bhoonofy very well).
✔️ Add 4 glass of water, cover and cook for 5-8 minutes on medium flame.
✔️ At this stage, add soaked rice, cover and cook till water dries out and then put on dum.
✔️Rice are ready to serve.
3️⃣Mutabbal🥣
1 large eggplant 🍆
2 tbsp yoghurt
1 tbsp grated garlic
1 tbsp lemon juice
2 tbsp olive oil
1/2 tsp salt
1 tbsp tahini paste (followed food fusion recipe). Roast 1 tbsp sesame seeds until turns to light golden colour then blend with 1 tsp olive oil until you get a creamy texture.
✔️Grill the eggplant in the oven for 20 to 25 minutes (Preheat the oven to 250 degrees) or till fully cooked and mushy. You can either grill it on the stove flame.
✔️Peel the eggplant, chop the pulp and mash it into a smooth puree using a knife.
✔️ In a bowl, mix together grilled & mashed eggplant along with all the above-mentioned ingredients. If you want smooth and creamy texture then blend it using Blender.
✔️Garnish with black olives and olive oil.
4️⃣Tomato Chatni 🍅🥫
2 tomatoes
2-3 Green Chillies
3 garlic cloves
Coriander leaves
Red chilli powder a pinch
Salt to taste
✔️ First blend tomatoes to a paste then add all other ingredients and grind to maintain right consistency (don’t make a paste) then add salt and red chilli powder.
