Coffee Buns dough
-Milk 150 ml
-instant yeast 1 tsp
-sugar 1 tsp.
make a *milk mixture with warm milk add yeast and sugar mix well and set aside for 5 minutes until froth is formed.
- all-purpose flour 2 cup
- salt 1/2 tsp
- icing sugar 1 tbsp
- egg 1
- *milk mixture
Coffee Buns preparation method
Make a dough of the above ingredients and knead well for 2 minutes. Once the dough is smooth, add 2 tbsp of unsalted butter. in the dough and knead well for around 10- 15 minutes until the dough is all smooth and elastic. cover it up and leave for 1 hour. ( i boiled some water in a pot and covered it with lid and placed the dough pot on it to fasten the process as heat helps it rise faster)
Coffee Buns topping
- instant coffee 1 tsp
- warm water 1 tsp
- butter 50 gram
- powder sugar 50 gram
- cake flour 50 gram
- egg 1
cake flour is simple all purpose flour and corn flour mix. For this recipe, i added 1/2 tsp cornflour in 2.5 tbsp of all purpose flour.
mix coffee in water, set aside. beat butter until smooth, add sugar and continue to beat until creamy. Add in cake flour, egg, and coffee mix. beat well then fill it in a piping bag and put in the fridge.
Once the bun is double in size, make 9 equal pieces, and further divide one of those dough into 8 equal pieces. make balls of big dough, cover and rest for 10 minutes.
Flatten the small dough and wrap it around frozen butter, then flatten the big dough and wrap it around small butter dough
Place them all into a baking tray, cover and leave to rise 30 - 40 minutes
Pipe topping on the buns through spirally motion. Bake for 15 minutes on 180-200C
