Achari Aalu Baingan

Ingredients:
Mustard seeds (Rai)
Onion Seeds (Kalonji)
Cumin seeds (zeera)
Fenugreek Seeds (methi daana)
Take half tsp each.
5-6 curry leaves (Kari patta)
Brinjal (Baingan) 2 medium
Tomatoes 2
Potatoes 2
Green chillies 2
Salt
Red chilli flakes
Method:
Fry all seeds and curry leaves in oil for 20 secs.
Add brinjal, potatoes, tomatoes (all cut in cubes) and green chillies.
Add salt and red chilli flakes according to taste and mix.
Cover it with the lid on a very low flame (dam wala) and leave it until fully cooked!
In 20-25 mins it’ll be fully cooked. Mix it in between. Do not add water at all. It’ll be cooked in its own water. Tadaaa!! Readyy...
Enjoy with roti and raita
