Thai Coconut Chicken Curry

Ingredients
100 gms of chicken (you may take more and tweak the recipe as per the quantity)
Olive oil
1/2 cup coconut milk / you can also use coconut powder and mix it in low-fat milk
1/2 cup water
Lemongrass
Basil leaves
Kaffir leaves (optional)
Dried basil leaves
1 bunch of Coriander
2 tbsp spoon fish sauce
Green chillies as per your taste
Ginger garlic paste

Method
In a wok, Add 1 tablespoon olive oil and cook the chicken breast strips/chicken pieces until golden brown. Now transfer the cooked chicken to a plate.

Now in the same wok, add the minced garlic and ginger, cook for 30 seconds until fragrant. Add in Thai curry paste( homemade) and lime leaves, stir to combine. Add in the coconut milk and water and stir to combine. Adjust the spices. Add in black pepper if need be. Add the chicken back in, and cook for another few minutes until heated thru. Throw in dried and fresh basil leaves and garnish it with red chillies. You may have it with bran bread/brown rice (once in a week is fine) or with cauliflower rice.

For curry paste:
Peel in ginger and garlic and add it in a blender with two onions, coriander with roots stems, lemon grass, green chillies, red button chillies, fish sauce and lime juice. Blend it and that's it.
