Sweet and Sour Almond Chicken

Sweet and Sour Almond Chicken

Ingredients
chicken boneless
Cornflour
Eggs
Salt
Black pepper
Red crushed chillies
Garlic paste
Soy sauce
Vinegar
Chilli sauce
Chilli garlic sauce
Ketchup
Chicken stock
Boiled rice
Vegetables (carrots, onions, capsicum, potatoes, peas and spring onion)
Pineapple chunks and juice
Brown sugar
Gurr
Oil

Method
Step 1: take 1 kg chicken boneless cubes. Marinate it with 2tblsp soy sauce, 1 tbsp vinegar, garlic paste 1 tsp, salt to taste, black pepper 1/2 tsp, red chilli flakes 1/2 tsp. Marinate it for at least half n hour. Then add eggs and dry cornflour powder in chicken and fry on medium heat. This mixture should not be too runny. I usually take small portions of chicken with one egg required amount of cornflour and fry it, then I do the same until all chicken is fried till golden brown. Chicken should remain juicy n succulent so don't fry for too long or at slow heat.

Step 2: take some oil in a pan. Add freshly chopped garlic. Saute it and add chopped vegetables. Stir fry them then add little water, salt, black pepper, red crushed chilli, cumin seeds and cook until veggies get tender. Now add soy sauce, vinegar, chilli sauce and some chilli garlic sauce. Roll in the rice. Cook for two to three minutes. Keep aside. You can also use scrambled eggs in it.

Step 3: in a pan, take some oil, almost 3 tbsp. Add in it chopped garlic 1 tsp. Saute it and add cubes of onion and bell pepper with salt, black pepper and red crushed chillies. Stir fry them. Now add in it fried chicken, ketchup half cup, chilli garlic sauce 2 tbsp, vinegar 2tblsp, chilli sauce 1 tbsp, chicken stock (up to ur requirement of gravy/sauce). Mix them. Now add pineapple chunks and pineapple juice. Also, add in it gurr and brown sugar according to your taste and likeness. (i didn't add pineapple chunks this time) add roasted almonds and sprinkle spring onions on the top after adding cornstarch mixture. Serve n enjoy
